Pasta Sbagliata and GIVEAWAY

So, American Express and the Tastemakers at Foodbuzz picked me – yes, me! – to participate in their Dinner@6 promotion and contest. Well, they picked me and 19 others to participate in this promotion.

Not only did they pick me, but American Express gave me a little something for my readers too! But that part will be later on – just a little tease so you keep reading to find out about the giveaway! My very first!

All I have to do is come up with a wonderful recipe that has 6 ingredients or less. A breeze, right? Yeah, a breeze like Hurricane Irene. Does 6 ingredients include things like oil in the pan? Salt and pepper? Flour for dredging? Apparently, at least according to the rules of this contest, it doesn’t include salt, pepper, oil or water. Well, phewwwwww!

Do you know how difficult it is to come up with a dish with only 6 ingredients? Okay! I got it!! One-two-three-four-five-six-seven – RATS! I did this over and over again.

And then I remembered – Pasta Sbagliata!

Pasta Sbagliata – loosely translated means Mistaken Pasta – came from my Mom and tweaked by me. My mother is an amazing cook, always has been. She has always been adventurous in the kitchen. Everything is always delicious (well, except for the lamb pie incident, which I wouldn’t have mentioned, but I can see my mother AND my sister reading this and saying to themselves, yeah, except that damn lamb pie – but I digress) .

As a cook, she has one small fault – she doesn’t always read the recipe through to the end before starting to cook. Dinner will be going along nicely and suddenly you will hear cursing mild expletives coming from the kitchen. It’s usually some major step she missed about 3/4 of the way in. My Mother is the Queen of fix-it-and-it’s-fab cooking.

And that’s how we came to this recipe. This was supposed to be a Rao’s recipe for guidance and a recipe my Uncle Nicky had made in the restaurant one day. Pasta with Sausage and Cabbage. Well, my mother misread a step big step in the Rao’s recipe where the Savoy cabbage had to be cut into strips and blanched and then cooled completely before adding to the sauce. She had decided that instead of using Savoy cabbage, she would use a bag of cole slaw mix. After she added the cabbage straight into the pan, she read the part about blanching.  After a little conversation between she and I, we thought that the cabbage this way would actually be better. There would be a texture to the pasta sauce and make it better and a quicker meal to boot! And so, Pasta Sbagliato was born.

This is probably the most requested recipe in my house – that is, when I can get anyone to actually request something besides “I don’t know”.

(Keep going, the part about the giveaway is coming, I promise ~ but the recipe is good too!)

There are 2 ways to make this recipe. Neither is difficult. One is just … hmmm … semi-homemade!

  • 1 T olive oil
  • 2 cloves garlic, minced
  • 1 lb of Italian sausage, removed from casing
  • 1 lb shredded cabbage
  • 3 C marinara sauce, homemade or jarred
  • 1/4 loosely packed torn basil
  • 1 lb pasta, cooked al dente

NOTE:  (1) The sausage can be sweet or hot, or a combination. You have to remove it from the casings before cooking. If you can find Italian sausage in bulk rather than link, even better! (2) This really needs a short pasta like penne or rigatoni.  The sauce is too bulky for a spaghetti or linguine. (3) You can shred the cabbage yourself or buy a 1 lb bag of cole slaw mix from the salad section in your supermarket.

Put a large pot of water on to boil. Once boiling, add the pasta and cook until al dente, about 11 minutes.

NOTE: By the time the pasta is cooked, the sauce will be done.

Heat olive oil in a large pan. Add garlic. Just as garlic begins to brown add sausage, crumbling it with the back of a spoon as it cooks.

NOTE: I use a pan large enough to hold the pasta as well when it’s finished cooking, this way I can add the cooked pasta into the sauce and serve straight from there.

When the sausage is almost cooked, lower the flame, and add the cabbage.

Cook cabbage, stirring frequently until the cabbage is soft and becoming translucent.  Season with salt and pepper to taste.

Add the marinara sauce. Once sauce is heated through, turn off heat, add basil and stir.

Once pasta is cooked, drain well and add to sauce.

Toss well.

NOTES TO MAKE THIS QUICKER:

  • You can use turkey sausage. This doesn’t make it quicker, but if you are limiting red meat, turkey is a good alternative. Don’t do it for the sodium. Turkey sausage has as much sodium as pork sausage.
  • Instead of home-made marinara sauce, you can use a good quality jarred marinara or tomato and basil sauce. A 24 oz. jar is the same as the 3 cups. I don’t suggest using sauces with mushrooms or other ingredients. There is a lot going on with this sauce already!
  • Instead of shredding a head of cabbage, grab a bag of cole slaw mix in the salad aisle of your supermarket. It’s already shredded. It’s the perfect amount. It has some shredded carrots in it, but they add a little sweetness and are good for your eyes. As you can see from the photos, I went the cole slaw route – the cabbage at the supermarket looked terrible!

Whether you’re using the short cuts or using everything from scratch you can have this meal on the table in the amount of time it takes to boil the water and cook the pasta (if you’re using marinara sauce that is made already, of course – for my pedantic friends)! It’s great for company or just family.

    In a 9×12 pan layer the following ingredients and bake uncovered for one hour at 350.

    1 can of cream of mushroom soup
    4 boneless chicken breast
    4 slices Swiss cheese
    1 can cream of chicken soup
    1 small bag of small croutons

    Mac and Cheese

    1 box elbow noodles
    1 cup half and half
    3 tbsp butter
    4 cups Shredded cheddar
    1 tsp dry mustard
    1 cup bread crumbs
    salt and pepper to taste

    Boil noodles just to al dente, drain. In a sauce pan melt 2 tbsp butter and add half and half, dry mustard and 3 cups of the cheese. Stir until melted. In a oven safe dish take remaining butter and rub on the inside of the dish and add the noodles. Pour the cheese mixture over the top making sure to coat everything. Over the top add remaining cheese and bread crumbs. Bake for 30 minutes at 360 degrees or until bubbling and golden on top.

    1-14oz can of sauerkraut…rinsed and drained
    2-cups shredded swiss cheese
    1/2 cup-Thousand Island dressing
    1 lb- corned beef cut in bite sized pieces
    5 slices rye bread
    1/3 cup melted butter
    In 2qt baking dish, layer in this order; sauerkraut, 1/2 of cheese, thousand island, corned beef, and last 1/2 of cheese. Toss bread cubes with melted butter and sprinkle on top. Bake at 350 until heated through and bread cubes are browned. Yum!

  63. I recently made delicious stuffed portobello mushrooms- you can stuff them with virtually anything but I sautéed shallots, spinach, and a red pepper, put it in a mushroom, and topped with pesto and a little cheese and then roasted in a 425F oven for 10 minutes… so yummy!

      Chile chicken Tacos

      2 lbs boneless, skinless chicken thighs
      4 garlic cloves, thinly sliced
      1/2 cup prepared tomato salsa
      1-2 Tb chopped canned chipotle chiles in adobo
      1 Tb chili powder
      coarse salt and ground pepper
      8 hard corn taco shells

      In slow cooker, combine chicken, garlic, salsa, chiles, chili powder,, 1 tsp. salt and 1/4 tsp pepper. Cover and cook on high about 4 hours or on low, 8 hours.

      Transfer chicken to serving bowl and shred, using two forks; moisten with cooking juices.
      Serve in taco shells, with preferred toppings: shredded cheese, lettuce, sour cream, guacamole, limes (optional).

      This is so yummy just as it is, so if you don’t have a bunch of toppings, it won’t suffer!

  101. My family loves Busy Day Chicken

    Chicken pieces (we usually use leg quarters)
    Onion soup mix
    3 c. Rice
    Mushroom (or Chicken) soup concentrate.

    Put rice in 9×13 baking dish. lay pieces of chicken over rice. Mix soup concentrate and water and onion soup mix. Pour over chicken and cover with foil. Place in 350* oven for 2 hours.

    So good for how simple it is.

  111. Carrot cake is my absolute favorite dessert and this microwave recipe is so easy:

    Mix together:
    1/2 cup oil
    1 cup brown sugar
    2 eggs
    cinnamon
    1 1/2 cups whole wheat flour
    1 packet baking soda
    1 cup of raw carrots

    Put the mixture into a microwave-safe pyrex, preferably round, and in about 7 minutes it’s ready!

  121. One of my favorite recipes, my mom taught me how to make this, it’s so yummy with a side of mashed potatoes.

    Chicken Monterrey

    1 tsp extra virgin olive oil (or butter)
    4 chicken breasts
    2 cups of shredded Monterrey jack cheese
    1/2 c onions (sliced)
    1 c mushrooms (canned or fresh)
    1 clove of garlic (minced)
    1 pinch of Morton’s seasoning salt

    Heat oil in pan, add garlic and onions and cook til translucent, add chicken breasts and grill over medium heat until nearly browned on both sizes, sprinkle with seasoning salt and add mushrooms to pan. Turn heat to low, sprinkle each chicken breast with some shredded cheese, and then cover with skillet lid. Allow cheese to melt then serve immediately.

My favorite easy 6-ingredient meal is Panzanella: cubes of country-style bread fried in olive oil, ripe tomatoes, crisp cucumbers, thin crescents of red onion, maybe some cubes of red bell peppers, and basil. The dressing I pour over all of this is usually just lemon or red wine vinegar, garlic & olive oil- so altogether maybe a few more than 6 ingredients, but very, very easy and the payoff is enormous!   147. Since I’m just learning how to cook, I don’t know many but … the french dip sandwiches I made for dinner last night only had six ingredients and was really good! I surprised myself ….

  148. Ham and Cheese casserole is a great six ingredient recipe to try.
    * 1 (32 ounce) package frozen hash browns
    * 8 ounces sour cream
    * 1 (10 1/2 ounce) can cream of chicken soup
    * 1/4 cup butter, melted
    * 12 ounces shredded cheddar cheese
    * 2 cups chopped cooked ham

    Directions:
    Combine all ingredients in large mixing bowl.
    Press into 13 x 9 2 inch casserole
    Bake at 375 degrees for 1 hour or until potatoes in center of casserole are tender.

    1/4 cup lemon juice
    1/4 cup honey
    2 tablespoons reduced-sodium soy sauce

    2 garlic cloves, minced
    4 boneless pork loin chops
    combine the first five ingredients. Pour 1/2 cup into a large resealable plastic bag; add pork chops.
    Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
    over heat for 4-5 minutes on each side or until a meat thermometer reads 160°, basting frequently with remaining marinade.

    Pork chops stuffed with bacon and gouda
    Ingredients

    2 ounces smoked Gouda cheese, shredded
    4 slices bacon, cooked and crumbled
    1/4 cup chopped fresh parsley
    1/8 teaspoon ground black pepper
    2 (2 1/4 inch thick) center-cut, bone-in pork chops
    1 teaspoon olive oil

    Directions

    Preheat an outdoor grill for medium heat.
    In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon black pepper.
    Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush meat with oil, and season with salt and more black pepper.
    Lightly oil the grill grate. Grill over medium heat for 5 to 8 mi

  167. My favorite 6-ingredient recipe is Baked Eggs with Tomato and Spinach: 8 eggs (separated), half an onion, bunch of spinach, can of diced tomatoes, Parmesan Cheese, Mozzarella Cheese.

    Mix eggs whites with cheeses. Saute onions, add spinach and tomatoes. Add to egg mixture and pour into small baking pan. Top with egg yolks and bake at 400 degrees for 25 minutes until puffed and golden. Delicious with crusty french bread!

  175. YUMMY! WOW, what a great giveaway! I would have to say that a quick breakfast chilaquiles is my fav. Saute 10 corn tortillas, cut in triangles, in olive oil and fry until cooked. Add green salsa, black beans and cook for 10 minutes, Top with chopped red onions and cheese. Devour!

  182. My family’s favorite 6 ingredients dinner is Creamy Asian Beef Noodle.

    8 ounces soba (Japanese buckwheat noodles)
    1 1/2 pounds of skirt steak, cut in half or thirds to fit in skillet
    1 pound(s) of snow peas, stem ends removed
    2 tsp. of soy sauce
    8 ounce(s) of 8 ounce Philadelphia Cream Cheese, softened
    2 Green Onion, chopped

    In a pot of boiling salted water, cook noodles until al dente. Drain and set aside.

    Heat a large skillet over medium-high. Season steak with salt and pepper. Cook, turning once, until medium-rare, 3 to 5 minutes per side. Transfer steak to a cutting board and loosely cover with aluminum foil (reserve skillet with juices).

    Add snow peas to skillet and toss with juices. Cook on medium-high heat, tossing occasionally until crisp-tender, 2 to 3 minutes. Add noodles, soy sauce, and cream cheese, cook until warmed through, about 1 minute. Transfer to serving bowls. Slice steak and place on top of noodles. Sprinkle with green onions and enjoy.

  186. I love the story behind your recipe! That is how the best recipes are born sometimes right? by mistake! haha I really want to try this!

    My go-to 6 ingredient recipe is!:

    – 1 box corn/gluten free shells
    – 1 cup cubed extra firm tofu
    – 2 huge handfulls of fresh baby spinach
    – A couple tablespoons of extra virgin olive oil
    – About 1/4-1/2 cup graded Pecorino Romano
    – salt and pepper to taste

    Cook the pasta according to directions, lightly saute the cubed tofu with olive oil, toss the spinach in with the warm pasta once it has been drained, stir the spinach in with the pasta and add the rest of the olive oil, stir, toss in the tofu with the pasta, stir, toss the cheese in, stir, salt and pepper to taste… Enjoy!

    -1 whole chicken
    -carrots
    -onion
    -celery
    -s&p

    THAT easy!

    My fav 6 ingredient recipe is a quick pasta dish…

    1 lb rigatoni
    1 large onion, chopped
    a couple of cloves of garlic, minced
    1 lb fresh tomatoes, chopped
    handful of basil, roughly chopped
    1 lb fresh mozzarella
    2 tbsp olive oil
    salt & pepper

    Cook pasta according to package instructions. While the pasta is cooking, saute the onion and garlic in olive oil over medium heat, then add the chopped tomatoes. Season with salt and pepper, to taste. Cut the mozzarella into bite sized pieces, drain the pasta (when it is al dente) and toss everything together. Top with the chopped basil and you are good to go!

  189. Ooh this looks so good! I love to make simple crustless quiches, using 4 eggs, 1 cup of milk or half-and-half, some veggies and cheese. Bake in pie dish for 45-50 minutes in a preheated 350 oven.
